At Salt, diners are treated with respect.

The kitchen trusts them to try new things — maybe fried squash blossoms stuffed with salt cod, or a carpaccio of Spanish rock octopus layered with mizuna and bulbs of baby fennel.

Last spring, Salt’s co-owner and chef Jason Ambrose put his kitchen’s daily operations and menu development in the hands of his sous-chef, Brian Lavin. It was a smooth transition, partly because the menu at Salt had always been a collaborative effort among Ambrose and his team.
